Molly Pitcher -- Mary (Molly) Ludwig, a Pennsylvanian servant of General Irving (or Irvine), taking over a gun at the Battle of Monmouth on June 28, 1778. She had been a water carrier, bringing pitchers of water to the Americans, thus the name "Molly Pitcher."
