Potato Pudding - 1894 Style

From a 19th century recipe for potato pudding

Ingredients:

  • 1 1/2 pints mashed potato
  • 1 teacup sugar
  • 1/2 cup butter
  • 1 cup flour
  • 1 quart milk
  • 4 eggs
  • salt to taste
  • nutmeg, lemon, or vanilla

Preparation:

One and one-half pints of mashed potato, one teacup of sugar, one-half cup of butter, one cup of flour, one quart of milk, four eggs, and salt to taste. Flavor with lemon, nutmeg, or vanilla. Bake one hour.
