How to Shell Chestnuts

How to shell chestnuts: from Fanny Farmer's 1896 Boston Cooking-School Cook Book.

Difficulty Level: Average     Time Required: 20-30 min


  1. Cut a half-inch gash on flat sides of chestnuts.
  2. PUt in an omelet pan with one-half teaspoon butter to each cup of chestnuts.
  3. Shake over range until butter is melted.
  4. Put in oven and let stand five minutes.
  5. Remove from oven.
  6. With a small knife, take off shells.

Tips:

  1. By this method shelling and blanching is accomplished at the same time, as skins adhere to shells.
  2. (Remember this is an 1896 tip, check a more recent cookbook before attempting to shell chestnuts today.)
