How To Destroy the Putrid Smell Which Meat Acquires During the Hot Weather

By , About.com Guide

From an 1805 cookbook: solving a typical 19th century cooking problem. Don't try it today! From The Art of Cooking by Mrs. Glasse, printed in 1805. The original terminology is preserved.
Time Required: 30 minutes

Here's How:

  1. Put the meat into a sauce-pan full of water
  2. Scum it when it boils
  3. Select a burning pit coal, very compact and destitute of smoke
  4. Throw it into the sauce-pan
  5. Boil another two minutes
  6. Take out the meat
  7. Wipe it well in order to dry it
  8. Put the meat on the spit and roast it as usual

Tips:

  1. You really don't want to try this in the 21st century, do you?
  2. Tip for the 21st century: count your blessings and be grateful for refrigerators, freezers and supermarkets!
