Time Required: 30 minutes
Here's How:
- Put the meat into a sauce-pan full of water
- Scum it when it boils
- Select a burning pit coal, very compact and destitute of smoke
- Throw it into the sauce-pan
- Boil another two minutes
- Take out the meat
- Wipe it well in order to dry it
- Put the meat on the spit and roast it as usual

- You really don't want to try this in the 21st century, do you?
